Pumpkin Oatmeal Bites

Happy Fall! I thought this would be the perfect time to get back into blogging. It’s my favorite time of the year to be in the kitchen, so it just seems fitting. Now I don’t know about where you guys are, but it does not feel like fall in Upstate NY. Ninety degrees in September doesn’t exactly scream “autumn” and I haven’t even thought about picking a single apple or pumpkin. However, the calendar says its September, the pools are closed, and the mums are on my porch so I will cook like it’s fall.

These no-bake Pumpkin Oatmeal Bites are perfect in the morning for a quick breakfast on the go or a mid-day snack.

Here’s what you’ll need:

  • 1 cup pumpkin purée
  • 3 cups rolled oats
  • 1 tbsp flax seeds
  • 4 tbsp agave nectar
  • 1/2 tsp Wildtree Pumpkin Pie Cheesecake Blend
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 cup semi-sweet chocolate chips

Mix all of the ingredients together in a large bowl. Line a baking sheet with parchment paper and roll the mixture into small balls, about 2 tbsp for each bite. Refrigerate or freeze the bites for about an hour to harden.

I like to store these in the freezer in an air-tight container or freezer bag. Whenever I want one or two, I take them out  and thaw them for about 20 minutes.
