Nutella Football Pancakes

Who’s ready for Super Bowl Sunday? We are big football fans and the Super Bowl is always an exciting day in our home. Even though our team completely bombed this year (Giants fans, you feel me?), we are still excited to see which teams make it and cheer them on. It’s a whole day celebration, starting with breakfast. The kids will get a “kick” out of these pancakes!

I make the pancakes with an easy pre-made mix and prepare the batter according to the box instructions while getting my griddle nice and hot. Let the batter sit for a minute, then spoon the batter onto the hot griddle into a football shape. Wait for the batter to start bubbling, flip the pancakes and cook them for another minute or until they are golden.

Spoon some Nutella into a plastic sandwich bag and cut a tiny hole in one of the corners (or use a piping bag if you have one). Squeeze the Nutella onto the pancakes in the design of football laces.

Serve with whip cream, syrup, strawberries, or whatever your family likes!

Pumpkin Oatmeal Bites

Happy Fall! I thought this would be the perfect time to get back into blogging. It’s my favorite time of the year to be in the kitchen, so it just seems fitting. Now I don’t know about where you guys are, but it does not feel like fall in Upstate NY. Ninety degrees in September doesn’t exactly scream “autumn” and I haven’t even thought about picking a single apple or pumpkin. However, the calendar says its September, the pools are closed, and the mums are on my porch so I will cook like it’s fall.

These no-bake Pumpkin Oatmeal Bites are perfect in the morning for a quick breakfast on the go or a mid-day snack.

Apple Pumpkin Pie Smoothie

It’s October and that means everything apples and pumpkins! Apple picking, apple pie, apple crisp, pumpkin patching, pumpkin carving, pumpkin spice lattes…the list goes on and on!! Why not combine the two? That’s exactly what I did here with this Apple Pumpkin Pie Smoothie. You could have this for breakfast, a snack, or dessert. And the added bonus…it’s healthy!

Sweet Potato & Kale Fusilli

In this month’s Degustabox, I received a box of Sam Mills Gluten Free Corn & Quinoa Pasta. This was my first time trying a gluten free pasta, and I was pleasantly surprised! I thought it would have an awful “fake” taste, but it was a great substitute. The texture was similar to regular pasta and the flavor was very good. It is easy to overcook this pasta, however, and can get mushy if you’re not careful while cooking it.

Chia Seed Pudding 

After a summer full of BBQs and get togethers with lots of food and alcohol, I decided to do a 10 day cleanse. Today is day 4 and I have to start getting creative with my dairy, sugar, and gluten restrictions for the next 6 days. This Chia Seed Pudding is a great breakfast or snack during this cleanse. It’s dairy and gluten free and is packed with protein to leave me feeling full. Chia seeds are also rich in omega-3 fatty acids, antioxidants, calcium, and fiber. They are a superfood! I love to eat clean even while I’m not cleansing, so this is something that is perfect for breakfast anytime!

Skillet Cod with Tomatoes and Capers

I haven’t posted many fish recipes and there’s a reason for that….I don’t cook a lot of fish at home. My husband and kids won’t touch seafood and I would rather not cook more than one meal for dinner, so I usually only eat seafood when we go out to eat. I love seafood and wish I ate it more often.

The other day at the market I stopped at the seafood counter that I usually pass right by. The wild caught cod filets were on sale, so I grabbed a couple of pounds.

Quinoa & Chickpea Salad

This salad is the perfect summer lunch for the health conscious. I try to eat clean especially during the weekdays (and do a little splurging on the weekends). Breakfast and lunch are usually my most clean meals of the day and I try putting something quick together. I’ve been experimenting a lot more with quinoa recently and love how versatile it is. It’s super easy, super clean, and a superfood! Between the quinoa and chickpeas, this salad is packed with protein and will leave you feeling satisfied and full for hours. Not to mention, it’s also delicious!
